Zucchini with eggs

Serves 4


  • 1kg zucchini cut into slices
  • 6 eggs
  • 5g ground mint
  • 200ml sunflower oil
  • Salt
  • Black pepper



  • In a deep frying pan, heat the sunflower oil and add the zucchini. Once the colour of the zucchini turns golden, add the eggs.
  • Stir lightly and often until the eggs are cooked, and they mix with the zucchini. If you wish, you can add black pepper.
  • Serve in a plate and sprinkle ground mint on top.
