Zucchini with eggs
- 1kg zucchini cut into slices
- 6 eggs
- 5g ground mint
- 200ml sunflower oil
- Black pepper
- In a deep frying pan, heat the sunflower oil and add the zucchini. Once the colour of the zucchini turns golden, add the eggs.
- Stir lightly and often until the eggs are cooked, and they mix with the zucchini. If you wish, you can add black pepper.
- Serve in a plate and sprinkle ground mint on top.
